Veggie skewers pre-prepared (we love peppers, onions, sweet potato, courgette and aubergine)
2 tablespoons of Pirigo Sauce to coat the veggie skewers
Optional serving sauce:
5 tablespoons of Pirigo Sauce
1 tablespoons of double cream
1 teaspoon of lemon juice
1. Coat the veggie skewers in 2 tablespoons of Pirigo Sauce
2a. If using BBQ, bring it to a high heat, and then rub half an onion on the grids to clean any excess dirt. Place veggie skewers on BBQ until seared, then turn and do the same on the other side. Cooking time will depend on the thickness of your vegetables
2b. If using a grill, preheat to high. Place veggie skewers on a large baking tray. Turn grill down to medium heat and place veggie skewers under grill. Turn occasionally until cooked
3. This next part is optional, but very delicious!
Heat 5 tablespoons of Pirigo Sauce in a saucepan at medium heat.
Add 1 tablespoon of double cream and 1 teaspoon of freshly squeezed lemon juice (or bottled, if that's all you have!)
Alternatively heat in microwavable container in the microwave, stirring occasionally
When the sauce comes to a gentle boil, pour this over your veggie skewers
These veggie skewers are fantastic with rice and chips, or as a side dish to your favourite meal
